second:
 After drying, they will roast the coffee manually by stirring evenly under the supervision of the roaster so that they get the right maturity according to their standards. Their advantage when not using a machine is that they can control the quality of the coffee.

third: they will pour the ripe coffee in a special place which is a place used from generation to generation by Balinese elders called a mortar. A mortar is specially made by local people using large stones and making a hole in it, then they make a piece of wood to crush it so that it becomes powder.
